A Lamb loaf stuffed with onion, prunes, apricots and fresh mint wrapped in silverbeet leaves.
Lightly grease sheet of foil (approximately 45cm wide x 60m long).
Soak apricots in water for about 1 hour, drain apricots.
Cut away white stems from silverbeet.
Bring large saucepan of water to boil, add leaves, cook for 1 minute. Drain. Rinse leaves under cold water until cool. Drain well.
Combine lamb, onion, spring onion, sultanas, mint, egg & cream in a bowl. Mix well.
Slightly overlap silverbeet on foil to make 32cm x 42cm rectangle.
Spread mince mixture over silverbeet.
Place apricots & prunes down one long side of minced mixture.
Roll up from long side into log shape; twist ends of foil.
Place on oven tray, or place in roasting pan with cubed seasoned oiled vegs to roast at the same time.
Cook in mod oven- 180c/350f for approximately 45 minutes, or until cooked through.
