Suggest a better description1. Lightly coat eight inch square cooking pan with cooking spray
2. Line pan with plastic wrap, leaving a six inch overhang on two sides
3. Freeze pan at least ten minutes
4. In a medium pot, combine corn syrup, 1/4 cup cream, butter, granulated sugar, cocoa and a pinch of salt
5. Bring to a boil, whisking over medium-high
6. Remove from heat and let fuge sauce cool
7. Meanwhile, remove one pint of ice cream from freezer and let soften (about 15 minutes)
8. Evenly press softened ice cream into pan
9. Top with a single layer of graham crackers, breaking to fit
10. Drizzle with 1/4 cup fudge sauce and freeze 15 minutes
11. Repeat twice, omitting sauce on final layer
12. Wrap in plastic wrap and freeze until firm (eight hours or up to three days)
13. Cover and refrigerate remaining fudge sauce
14. To serve, invert pan and run under tepid water to loosen cake
15. Invert onto platter and remove plastic wrap
16. Microwave fudge sauce in 30 second increments until pourable
17. Pour over cake and freeze to solidify (five minutes)
18. In a large mixing bowl, whip 1 1/2 cups cream and confectioners sugar until stiff peaks form (three to five minutes)
19. Dollop cake with whipped cream and dust with cocoa
20. Serve immediately
You want the ice cream to be just soft enough to work with. Too soft and the cake will be icy. Take each pint out to soften while the cake layers are freezing.
