Wash hens and rub cavities with lemon. Salt and pepper cavities.
Stuff hens with dressing. Brush exteriors with olive oil.
Bake hens for 1 hour or until legs move easily.
Dressing instructions:
Melt butter in skillet. Saute onion and green pepper until soft. Add sausage and saute until juices are clear. Add walnuts and saute until nuts are golden. Drain off excess fat.
Remove from heat. Add rice, pepper and salts. Add Cognac and mix well. Cool dressing before stuffing hens.
Hens may also be grilled. Preheat automatic charcoal grill to low. Raise grill to position farthest away from flame. Cover grill with aluminum foil. Place hens on foil, cover with more foil, and grill for one hour or until legs move easily.
