To fill chocolates, or to ice a chocolate cake
Rip the mint leaves roughly.
Place the sugar in a pan with water, bring to a boil and add mint leaves. Simmer for 3 minutes, then allow to cool completely.
Strain, then bring back to a simmer.
While still hot, pour over the chocolate and whisk well until smooth. Allow to cool for around 30 minutes before using.
