Creamy, cheesy grits great for breakfast or brunch. And really good with my Italian Brunch Casserole.

Make grits using 2 cups of water and 1 cup whole milk. Cook until grits are done.
Add 1 stick of butter and stir until melted. Add about 1/2 cup of Monterey Jack Velveeta cheese and 1/2 cup of Deluxe American Velveeta cheese and about a tablespoon on minced garlic (I also add a little liquid from the jar of minced garlic for flavor). Add Cajun seasoning. Stir until the cheese melts.
Beat an egg in a measuring cup and add milk to fill to 1 cup total. Stir this into the grits mixture and pour into buttered casserole dish. Cover with corn flake crumbs and dot with bits of butter.
Bake for 45 minutes in 350 degree oven. (You can also cook for 1 hour in 325 degree oven if you want to make this with my Italian Brunch Casserole.)
