Suggest a better descriptionBoil the scraped potatoes in plenty of salted water until the tip of the knife meets a little resistance when inserted in the centre. Drain, and when cool enough, slice the potatoes into 1/4 inch pieces. Chop the herbs and garlic finely and mix into the butter adding lemon juice, Tabasco and seasoning to taste. Divide the potato slices between the sheets of foil and top with a spoonful of garlic butter. Gather the foil together to form bundles and keeping the gathered end uppermost, cook over hot coals for 10 minutes.
