If you like garlic this one is for you.
Peel and de-vein shrimp, remove tails. Heat a large frying pan to medium and then put in the olive oil, butter, chile, and half the garlic. Turn down the heat and cook, stirring, for three minutes. You do not want to over-cook the garlic, it will become bitter. Add the shrimp and sprinkle with the remaining garlic.
Cook for 3 minutes or until the shrimp are pink. Turn the shrimp, add the wine, and cook for an additional 4 minutes. Season well with some grinds of sea salt and black pepper.
When serving garnish with parsley and provide bread to soak up the sauce. Serve over pasta.
