Bring small pot of water to a boil and add the garlic, boil for ten minutes
After garlic is boiled, remove with a fork and place into medium bowl or salad bowl you will use to serve. Cover with large pinch of salt and then mash garlic clove into salt with a fork.
Whisk in vinegar and mustard.
Season with fresh ground pepper to taste.
While whisking add oil in a small stream and continue whisking until emulsified.
