Simple and easy Main Dish that's made even easier by using frozen, deveined tail-off shrimp. Prep time will take longer if shrimp need to be deveined and tails removed. This is an excellent diet-friendly recipe. The lemon juice can easily be reduced as desired.
Preheat oven to 400?. Coat 4 individual gratin dishes with cooking spray (or a 8 x 8 baking dish can be substituted). If using frozen shrimp, make sure it's thawed in advance. Divide shrimp among dishes; set aside.
Combine breadcrumbs and next 4 ingredients; stir in juice and oil. Sprinkle breadcrumb mixture over shrimp. Place dishes on baking sheet. (This step not necessary if using a baking dish.) Sprinkle breadcrumb mixture over shrimp.
Bake at 400? for 13 minutes (20-25 monutes for baking dish) or until shrimp are done and breadcrumbs are slightly brown. Yield: 4 servings
