Add morels. Cook 2 minutes
Add shallot and garlic. Cook a further 3 to 4 minutes
Flame brandy in pan (watch out!)
Add demi glace. Cook until syrupy.
Add cream and mustard.
Add parsley. Season to taste.
Add asparagus and warm through
Arrange crostini on plate, Cover with morel/asparagus mixture.
