Ingredients

2 cucumbers
2 lbs tomatoes; seeded and chopped
1 1/2 red bell pepper; coarsely chopped
1 clove garlic; chopped
3 tablespoons lemon juice or lime juice
1 tablespoon olive oil
1 tsp. Salt
1/8 tsp. pepper
1 cup fresh corn kernels
1 avocado
1 1/4 cups red onion; thinly sliced

Preparation

Cut 1 cucmber into ¼ “ dice and set aside. Cut other cucmber into chunks.

In food processor, blend tomatoes, red pepper, garlic, lemon juice, oil, salt, pepper, and cucumber chunks. Stir in diced cucmber. Chill 3-24 hours. Top with corn, avocado, and onion.
