Grated ginger adds a spicy bite to this family-pleasing stir fry. Serve it with soba noodles or whole-grain vermicelli on the side.
In a small bowl, combine the broth, soy sauce, 2 tablespoons water, cornstarch, gingerroot, garlic, sesame oil, and red pepper flakes, whisking until the cornstarch is dissolved. Set aside.
In a large nonstick skillet, heat 1 teaspoon canola oil over medium-high heat, swirling to coat the bottom. Cook half the beef for 2 to 3 minutes, or until browned, stirring and turning constantly. Trasnsfer to a medium plate. Repeat with the remaining beef (no additional oil needed). Set all the beef aside.
Heat the 1 remaining teaspoon canola oil in the same skillet, swirling to coat the bottom. Cook the broccoli for 2 to 3 minutes, or until tender-crisp, stirring frequently. If the mixture becomes too dry,add the remaining 1 to 2 tablespoons water as needed.
Stir the beef into the broccoli. Stir the broth mixture, then stir it into the broccoli. Cook for 1 to 2 minutes, or until the beef is heated through and the broth mixture is thickened. Sprinkle with the green onions.
Cook's tip on toasted sesame oil: Toasted sesame oil is integral to Asian cuisine. Just a small amount infuses an entire dish with sesame flavor. Since you need to use only a little bit for each recipe, a bottle of sesame oil can last for a long time. Store it in the refrigerator to prolong its freshness.
