Pork chops brined with ginger and star anise.
Day before:
Add broth to a medium saucepan, heat on medium-high heat.
Add 1/4 cup kosher salt, brown sugar, peppercorns, star anise, ginger, bay leaf. Cook until salt & sugar is dissolved.
Remove from heat, add fresh thyme, and cool.
Once cooled, combine brine with ice water. Add pork chops, and allow to soak overnight or 12 hours.
Day of:
Preheat oven to 375 degrees.
Remove chops from brine and pat dry. Season with salt and pepper.
Heat a large skillet over medium-high heat with oil. Sear pork chops on each side until just browned.
Transfer pork chops to a broiler pan and bake in oven for 15-20 minutes, until pork reaches 145 degrees in center. Let rest 5 minutes, serve.
