Ginger Steamed Chicken with Snow Peas

Nice & light.


2 chicken breasts
2 tbsp lime & lemon juice
8 oz. snow/snap peas
1/2 cup water
1/2 tsp. Salt
3 pieces of ginger
1 large scallion
1/4 cup fresh parsley
1 lemon; quartered
dried pepper flakes
1 can straw mushrooms
1 can baby corn
1 handful bean sprouts

Cut the chicken into 3’’ x ½’’ strips. Marinate in lime/lemon juice them while trimming snow peas, scallion (white & green parts sliced finely), and parsley.

Bring water, salt & ginger to boil in skillet. Add chicken, lowering the heat to medium, and simmer covered for 5 minutes. Place snow peas, (bean sprouts, mushrooms, baby corn) over chicken, cover again & cook until crunchy (3-4 minutes). Serve in shallow bowls over brown rice with juices. Top with scallions and parsley & serve with lemon/lime wedge.

Not bad, but recommend adding italian dressing with the lemon juice when marinating the chicken
