2. Add onions, and garlic, cook for one minute.
3. Add remaining vegetables and half the ginger and cook additional 5-7 minutes, stirring constantly.
4. Stir in soy sauce and remaining ginger and cook until vegetables are as tender as you prefer them.
5. Add salt and pepper to taste and enjoy!
