The classic BLT, made gluten-free!
1. Preheat a large pan to medium-low. Cook bacon until golden brown (4-6 minutes) and flip. Cook bacon on the second side until all fatty parts have browned (3-5 minutes). Drain on paper towel.
2. Toast bread until lightly golden on both sides.
3. Spread a tablespoon of mayonnaise on each slice of bread.
4. Halve strips of bacon to fit bread and divide among 4 sandwiches.
5. Top each with tomato slices, lettuce, and second slice of bread.
6. Slice each sandwich in half and serve.
Bacon may be precooked and refrigerated to save about 15 minutes prep time.
