Finally! After many years of being bummed out by going off wheat, I made the decision to try to bake gluten free cookies. After many failed attempts (we're taking crumble after crumble), I have created a successful and delicious gluten free cookie recipe.
In a big mixing bowl, crack four eggs and beat slightly (enough to break the yokes and mix in with the whites). Next add 1/2 cup of Coconut Flour slowly, mixing in before adding more to the bowl. Once that is all mixed, add melted butter, mix. All together, add the coconut flakes, chocolate chips, and honey. Mix until everything is nice and friendly. Put in the freezer for 10 minutes; Preheat the oven to 375. Take out of the freezer and shape into little balls. Place on sheet pan. Put them in the oven and set a timer for 15 minutes. Check on them, and set the timer for another 5 minutes (I am still experimenting with time and heat, so that's why I suggest this set). Take out of the oven and let cool. Eat them all when ready, You won't be able to have just one.
