Ready in 30 minutes
This gluten free adaptation of a weight watchers version (good-bye deep fat) is a family favorite.
In a medium bowl, whisk together broth, conrstarch, sugar, soy sauce, vinegar and ginger; set aside.
Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and pepper and cook 2 minutes. Add chicken and cook until browned all over, about five minutes.
Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes.
Serve chicken and sauce over rice. Yields about 1 cup of chiken and sauce and 1/2 cup rice per serving.

Mrsswill 4y agoThis was the first gluten free meal I ever made, and it was fan-tastic! Not what I expected from a general tso, but it was really good and much healthier.
cookingmom 4y agoEveryone in the family enjoyed this and requested that we make it again. I had boneless skinless chicken thighs, so I used those instead of the breasts, and it worked well. We halved the sugar, and had to leave out the pepper flakes. Still, very good. This will be added to our regular rotation.
