In separate bowl add raisins, carrots, apple, pineapple, coconut. Str to mix well. Add mixture to dry ingredients
In a large bowl whisk together sugar, eggs, oil, vanilla. Add dry ingredients and fruit mixture to the wet ingredients in increments of thirds. Do not over stir. Only mix until wet
Fill muffin tins 3/4 of the way. Bake for 25-30 minutes.
