Great muffin for breakfast or lunchbox. Kyle loves them!
Preheat oven to 350 degrees F (180 C).
Grease a muffin tray with coconut oil or line with paper liners.
Mix wet ingredients in a large mixing bowl.
In a separate bowl whisk together dry ingredients, and add to the wet ingredients combining.
Fold in chocolate chips.
Bake for 20-25 minutes.
Cool completely. Enjoy with a pat of organic butter or ghee on top!
