Drain the gluten and rinse out the oil. Add the rest of the ingredients and mix well. Coat the gluten evenly. Cover and leave to marinate in the fridge for at least 2 hours or overnight. Thread the gluten onto the skewers. Broil for 3-5 minutes, turn often, until golden. Serve with peanut sauce.
Peanut sauce:
8 tbsp crunchy peanut butter
1/2 small onion, grated
1 1/4 cups coconut milk
2 tsp light brown sugar
1/4 tsp chili powder
1 tbsp dark soy sauce
Place sauce ingredients in a saucepan and stir over medium heat until boiling. Remove from heat and keep warm.
