A very simple and fast gluten free recipe with a wonderful result
Prepare the dough by mixing all dry ingredients.
Cut the (cold) butter in small pieces and mix thoroughly, before adding the egg.
Let rest in fridge.
Cut the apples in small cubes and mix wit juice of 3/4 lemon.
Soak raisins in hot water or cider or calvados.
Mix other dry ingredients.
Add apple and soaked raisins, without the liquid.
Roll dough to match baking tray (should be sufficient for 28 cm open tray, preferably with loose bottom inlay)
Cover baking tray
( you can brush the dough with mixture of 1 egg 50 grams sugar and 50 grams almond powder)
Put filling in tray on top of dough and make sure it sets tight
Bake for approx 50 minutes on 175 degrees Celsius
Boil marmalade with remaining lemon juice and a little water.
Use spoon to spread apricot topping
