Suggest a better description1. Heat oil in a large, deep non stick frying pan over moderate heat, brown chicken, onion and garlic for 4-5 minutes, turning chicken occassionally.
2. Reduce heat to low and add pumpkin, zucchini and capsicum. Stir in Nando's Curry Coconut Cooking Sauce and coconut milk and stir well and cover.
3. Simmer for 20 minutes. Stir in the coriander and continue to simmer, uncovered, for 5 minutes suntil chicken and vegetables are tender.
4. Serve hot with steamed rice.
