Slightly beat the 2 eggs in a big bowl. Add 1/2 the can of tomato soup. Stir. Add onion, beef, breadcrumbs and some S&P. Get in there with your hands.
Sauce: In a separate bowl, combine, the other 1/2 can of tomato soup, half can of water, vinegar, brown sugar, mustard and Worcestershire sauce. Whisk it all together. (Double vinegar, sugar, mustard and worcestershire if desired).
In a 9x13 pan, shape 2 meatloaf "boats." (About 1/3 meat mixture for each boat, then save the last 1/3 for the tops.)
Split the goat cheese between the two loaves. Use the rest of the meat to seal in the cheese. Cover with sauce mixture.
Bake at 350? for an hour. Baste it occasionally with the juices/sauce.
I think honestly, I bake it longer. Paula Deen says an hour but with 1.5 lbs meat. So yeah, maybe an hour and half.
