Crispy goat cheese discs served with a green salad.
In advance: add rosemary to 1/4 cup olive oil, let sit for a few hours.
Preheat the oven to 375
Mix the bread crumbs with salt and pepper, to taste.
Add 3 teaspoons of the olive oil, mix well.
Spread onto a baking sheet, toast in oven until golden and crisped, about 5 to 7 minutes.
Cool, then mix in the thyme.
Cut the goat cheese log into 12 discs.
Brush the goat cheese disks lightly with 1/4 cup of olive oil; season with salt and pepper.
Coat the cheese well with toasted bread crumbs.
Bake on a parchment until warmed through, about 5 minutes.
Divide greens between 4 plates.
Divide the goat cheese rounds on top of each salad.
Spritz with vinagrette if desired.
Tip - use fishing wire or floss to slice the goat cheese log!
