Suggest a better descriptionSet aside 1/3 cup of pinapple juice and mix in 1/2 teaspoon of almond extract. Set aside.
Next combine remaining undrained pineapple, the whipped topping and the dry pudding mix. Let stand for 5 minutes.
Cut pound cake lengthwise in thirds. Drizzle cake all over with Pineapple juice. Then spread one-third pudding cool whip mixture over bottom layer of cake. Top with second layer. Repeat layering, ending with pudding on top.
Chill 30 minutes or overnight. Sprinkle with toasted, sliced almonds and garnish with pineapple slices, if desired.
