"Hey JonL, I have no control over pictures that others post. That being said, I appreciate that debapaka took the time to post a picture of my recipe and sure that even thought she baked it in a round pan, it tasted just as good as if it had been baked in a square pan!"

Ingredients

1 cup Yellow corn meal
1 cup Flour; sifted
1/4 cup Sugar
1 tablespoon Baking Powder
1 teaspoon Salt
1/2 cup Canola oil
1 cup milk
1 extra large Egg; beaten

Original recipe makes 6

Servings  

Preparation

Preheat oven to 425 F.

Combine corn meal, flour, sugar, baking powder and salt in a bowl.

In separate bowl mix oil, beaten egg, and milk.

Add liquid to dry ingredients and stir until combined. Don't overmix.

Bake in greased 8 X 8 X 2 or 9 X 9 X 2 inch pan for 20 to 25 minutes.

This version is ok, nothing really sets it apart. The directions are a little confusing. The photo shows it made in a round pan, looks like cast iron but the recipe specifically calls for a square pan?

Love this corn bread cook in cask iron it is light and moist on the inside and crisp on the edges

Way too much oil in the recipe. Though the edges and bottom were done and crispy, the inside was too moist and looked liked it was filled with gel, instead of cakey.
