My grandmother's ham dinner we would eat for Christmas dinner and the next day she would use the bone of the ham and some meat to make her good bean soup in the crock pot.
FOR THE HAM: Preheat oven to 350 deg.
To make ham basting solution, mix brown sugar, honey, and reserved pineapple juice in a large measuring cup or small bowl.
Wash ham very well and score on top using 1/2 inch grid. Place ham in oven and bake for 1 hour.
Pull ham out and put cloves in cross section of slits and pineapple chunks on ham. Then, baste with brown sugar solution (enough to fully cover top of ham) and return oven. Keep basting ham with brown sugar solution and more honey every hour for a total of 3 hours cooking time, or until done. Baste very generously each hour.
When done, pull from oven, and serve for dinner. Don't eat it all! Save the bone and a pound or two of meat in the fridge for bean soup.
FOR THE BEAN SOUP: Use a Crock-pot
Remove any pineapple and cloves from leftover ham and place meat and bone in crock pot. Cover meat and bone with water (just over half of the crock).
Heat oil in skillet. Saute the onion, garlic, and any other vegetables you like (celery, carrots, etc.) until translucent and/or soft.
Add the sauteed vegetables to the crock-pot and the dry beans.
Cook on HIGH for 6 hours and then on LOW for 2 or 3 hours more for a total of 8 or 9 hours cooking time until beans are tender.
For the Bean Soup: You can add more ingredients if you want to the crock-pot (like carrots and celery), but before you do, saute them to soften them up some. We recommend adding pepper only, not salt, because the ham is already salty enough. If you do add salt, be sure to taste first so you don't over salt.
