Combine and set aside the oil, eggs, sugar, and vanilla. Sift flour, cinnamon, soda, and salt. Add dry ingredients to oil mixture gradually. Add apples and nuts. Bake in 2 regular loaf pans with greased bottoms for 1 hour and 20 minutes at 325 degrees. Cool 10 minutes in the pan. Sprinkle with sugar, if desired.

raybsa6We had a limited selection of "oil" at my house so I used a mixture of corn, vegetable, but mostly olive oil and it still turned out pretty darn good. I also added allspice and nutmeg in addition to the cinnamon which added to the depth of the flavors.6y ago
