Suggest a better descriptionDrizzle foil with olive oil and lay sage leaves down in pairs lengthwise. Season with salt and pepper. Combine pork, apple, apricot, parsley, pistachios and lemon zest in bowl and then take half of mixture and lay on top of sage leaves. Run your finger down the middle of the mixture creating a depression. Lay 2 links of chorizo down in depression and then cover with other half of pork mixture. Roll up into tight cylinder in foil. You can store it for 1-2 days in fridge. Cook for about 40 minutes at 400 degrees. Cut into slices and serve.
