Mix 2-4 sticks of butter, zest of 2 lemons and juice, 3 minced cloves of garlic and a handful of chopped parsley in a bowl and season with salt and pepper and a little olive oil. Season bird inside cavity with a little salt and pepper. Cut 2 onions in half and place halves inside cavity. Place 1 whole lemon and several fresh bay leaves inside cavity as well. Place butter mixture under skin of turkey being careful not to fully break skin which will help to contain butter and keep it from running out. Butter outside of turkey as well. Drizzle oil oil on outside of bird. You can prep bird 1 day in advance and store in fridge under foil if needed. Place turkey in oven at 450 degrees for 10 minutes for browning. Remove turkey and baste. Add a layer of smokey bacon to outside of turkey and baste again. Place bird in oven at 350 degrees and cook for 1/2 hour per 2 pounds basting occasionally. 4.5 hours for a 20 lb bird. Let bird rest for as long as it cooked.... another 4.5 hours (very important for moist turkey).
The Gravy:
Pour resting juices from turkey into pan on medium heat. Chop up bacon from turkey and onions and lemons and add to pan. Add a couple sprigs of rosemary. Add 3 chopped tomatoes. Remove wings from turkey and add into gravy. Add dry apple cider and more resting juices. Cook to reduce by half and then mash all ingredients with a masher. Add in chicken stock. Pour mixture through a sieve into a bowl and add a sprig of rosemary. To serve add crushed walnuts to the bottom of gravy boat and then pour in gravy. Enjoy!
