2. Combine dry ingredients in small bowl
3. Put wet ingredients into the bowl of a stand mixer. Beat on medium for 1-2 minutes until frothy and combined.
4. Add zucchini and beat again just to incorporate.
5. Slowly add dry ingredients with the mixer running until incorporated.
6. Spoon batter into 2 mini loaf pans or a muffin pan.
7. Bake 30 - 35 mins.
