Tried and true Banana Bread
Add baking soda to sour cream and let the reaction work while processing other ingredients Cream oil, sugar and eggs together in mixing bowl. Add bananas, flour, nuts, vanilla and salt to mixture. Stir well.
After baking soda and sour cream begin to bubble, fold into other ingredients until just blended.
Grease two small loaf pans (or one bread loaf pan) and bake at 350 degrees for 35-45 minutes depending on what size pans you use. It's done when a knife comes out clean.
Cool 10 minutes, loosen from pan around edges and turn out onto towel letting it continue to cool on its side until comfortable to touch.

Don't over stir the baking soda mixture as you fold it into the batter.
