We ate this with butter or cheese on it. Be sure to slice bread very thin as it is heavy bread. LOVED IT!!!
Grandpa Hansen kneaded the bread. Making bread was an all-day event, literally.
Recipe is written by Grandma Hansen by hand for her granddaughter, Lorianne in about 1984
The liquid may be partly pickle juice, cooked rhubarb, mashed beets, potato water, gravy or whatever.
Caution: Less than lukewarm is safest. The yeast is killed very easily.
These quantities bring the dough to the consistency at which it can be turned out on the table.
Then, white flour, in addition to the 8 cups is kneaded in to make the desired hardness.
We just put the dough in the oven to keep slightly warm by just having the light on in the oven.
Watch it that it becomes just a bit warm.
When double in bulk, from loaves.
Then let it rise to a little less than double.
Put loaves in oven at 400 degrees but do not pre-heat oven.
After 10 or 15 minutes, turn heat to 375 degrees.
Bake about 1 hour (total).
Then turn oven off and leave bread for 10 or 15 minutes.
