Ingredients

4 pounds Potatoes small red; skins on
3/4 Cup Sour cream
10 Large Eggs boiled
1 1/2 Capfuls lemom juice
1 Bunch Green onion
2 teaspoons Mustard
1 Small Vadalia onion
1 dash Celery salt
1 Cup Safflower mayonaise

Preparation

In a large bowl, cut up 2-3 potatoes that have been boiled.~

Cut up 2-3 green onions and green onion tops and layer on top of~

potatoes. Then add a slice of onion, chopped. Then 2 eggs sliced.~

Repeat layers seasoning after eggs with celery salt. Make dressing,~

3/4 cup sour cream, 1 1/2 capfuls of lemon juice, 2 teaspoons of~

prepared mustard adjust as desired and combine dressing with potatoes.~

YUMMY!~

Grandma always made this when we came up to visit in the summer. This is our favorite potato salad ever!!
