This is the recipe that my mom used while I was growing up. Of course I'm partial, but it is still the best BP I've ever had. Our whole family has missed her cooking this since she's been gone!
Scald milk in top of double boiler. In another bowl, combine beaten egg yolks, 2/3 c. sugar, salt and cornstarch. Pour about 1/2 cup of the milk mixture over the egg mixture and stir well to temper the egg mixture. return the egg mixture to the milk. Cook, stirring until the mixture is smooth and thickened. Thicken until the mixture is the texture you want the final pudding to be. Remove from heat and add vanilla extract.
In a 9X13 baking pan, arrange layers of wafers, bananas (cut across in medallions) with pudding. Continue to layer until all pudding is used. Allow to cool.
Heat oven to 425 degrees F. Beat egg whites until thick but not dry. Add remaining 1/4 cup sugar gradually, continue beating until meringue is very stiff and glossy. Brown in oven until meringue is golden (approx. 15 minutes)
Cool and serve!
Most critical part of cooking is the thickening of the pudding in the double boiler. MUST continuously still until thickened. Pudding should be still flowing but very thick. It will not get thicker after cooking. You may have to experiment with this until you get it right! Oh the Horror of it all! Having to make more than ONE batch!! ;-D
