My grandmother was the ultimate shop cheap, eat gourmet old German woman. I've never had lasagna that topped hers.
1. In large pan place olive oil along with water and bring to boil. Add lasagna noodles. Preheat oven to 375 degrees.
2. Brown hamburger along with onions, salt and pepper, Italian seasoning and mushrooms together in a pan over medium heat. Hamburger should be done but not overcooked. Drain grease, do not rinse hamburger. (The small amount of grease left on the hamburger after draining will add flavor to sauce and rinsing will wash off Italian seasoning.)
2. Add spaghetti sauces and pepperoni and cottage cheese. Noodles should be done and tender by now drain noodles and rinse.
3. In a 9x13 pan place two scoops of sauce on bottom, a layer of cheese, a layer of noodles and repeat until almost to top ending with a layer of sauce. Open remaining cheese and place on top of sauce. Cover with Tin foil and Bake at 375 degrees for 30 minutes, take off foil and allow to bake uncovered for 15 minutes until cheese is browned.
You can add some mild or sweet Italian sausage to the hamburger mixture if budget allows. My Nana used to get the Johnsonville Italian Sausages that were in the brats. and sliced them into pieces when she made it.
