Ingredients

3 tablespoons Canola oil
2 1/2 cups Onion; chopped
1/4 cup Parsley; chopped
4 cloves Garlic; minced
1 teaspoon Sugar
2 cups Plum tomatoes; chopped
1 cup Dry white wine; or chicken broth
1 1/2 pounds Shrimp; peeled
1 cup Feta cheese; crumbled
8 ounces Angel hair pasta; cooked

Preparation

Preheat oven to 425. Warm the oil in a large skillet over medium heat. Add the onions and saute until light golden brown - approximately 7 minutes.

Add the parsley, garlic and sugar and stir to mix. Add the tomatoes and wine to the skillet and cook until they are softened and their liquid is absorbed, about 20 minutes. Add the shrimp and cook, stirring constantly for 30 seconds.

Remove from heat.

Mix the pasta and shrimp sauce into a 2 quart casserole. Top with Feta cheese. Bake until the cheese starts to brown, about 5 minutes.

This is absolutely one of my favorite meals to make. I usually add a handful of sliced Greek olives and serve with salad. Delicious! I cannot recommend this one enough.

This was Delicious! Next time I make this I will use wine instead of chicken broth though, I found that after I added the feta, the dish was a little too salty.

Great meal to share with friends outdoors on a nice summer evening. Tried it again with red onions and a few sliced black olives for garnish... OMG! Crazy good!! Peace & blessings.
