Similar to scalloped potatoes.. easy to do in the microwave..
Slice potatoes into quarter of an inch slices. Layer vertically into a 9 x 13 dish. Between slices, sprinkle chopped onions. Sprinkle salt. Cube the butter and sprinkle butter dots over dish. Combine water and bullion cubes (can use regular chicken or veggie broth) and pour over potatoes. Cover and microwave on high for 18-21 minutes.
When done, drain remaining broth and sprinkle with cheddar cheese and parsley. Cook one minute more to melt cheese.
