The best spinach souffle EVAH!
Melt butter and blend in flour, salt, pepper, & nutmeg.
Gradually add cream, stirring until well-blended.
Cook over low heat, stirring until well-blended.
Cook over low heat, stirring constantly, until think and smooth.
Add cheese and spinach.
Cook until cheese is melted.
Cool.
Beat egg whites until they are stiff but not dry.
Beat yolks with same beater until thick and lemon colored.
Add yolks to spinach mixture.
Fold in whites.
Pour into buttered 1 1/2 qt souffle dish.
Bake at 325 for 45-50 minutes.
Serve immediately.
