Grilled Chicken with Herbs

Boneless chicken breasts marinated in herbs, garlic, oil and vinegar and broiled or grilled to perfection. This recipe is from The WEBB Cooks, articles and recipes by Robyn Webb, courtesy of the American Diabetes Association. Preparation time: 10 minutes.


2 tablespoons Italian flat leaf parsley; chopped
2 teaspoons Fresh rosemary; minced
2 teaspoons Fresh thyme; minced
1 teaspoon Dried sage
3 cloves Garlic; minced
1/4 cup olive oil
1/2 cup Balsamic vinegar
salt and pepper; to taste
1 1/2 pounds Chicken breast; skinless & boneless

Original recipe makes 6



In a blender, combine everything but the chicken. Blend together. Pour over chicken in a non-porous glass dish. Cover and marinate 2-48 hours.

Preheat grill to medium or set oven to broil.

Remove chicken from dish and grill or broil 6-7 minutes on a side or until center is no longer pink.

I changed the recipe a little and I butterflied the chicken!

Easy and yummy! Took a little longer on the grill than the recipe said but turned out great.

I used my fresh herbs and a some crushed garlic and added a little olive oil. Then I marinated the chicken for about an hour. The herbs blended together beuatifully. Butterflying the chicken helps marinate the chicken wonderfully. It gave me a way to use a lot of my homegrown herbs as well. Thanks for posting this recipe!
