A healthy summer meal.
Pico de Gallo:
Stir all ingredients together. Adjust ingredient amounts to taste. Let sit at least 30 minutes (and up to 1 hour) at room temperature to allow flavors to meld.
Slaw:
Whisk all ingredients, except for cabbage, until smooth. Toss cabbage with yogurt mixture until evenly coated. Adjust ingredient amounts to taste. Let sit at least 30 minutes (and up to 1 hour) at room temperature to allow flavors to meld.
Fish:
Heat gas grill to medium high heat (all grills are different, use best judgement). Cover halibut with lime juice, cumin and salt and pepper right before placing on grill. Place the fish on the hot grill, skin side down, and cook for about 10 minutes or until fish flakes easily with a fork. Cooking time will vary depending on type of grill and thickness of fish.
Tortillas:
While fish is cooking, warm tortillas on a baking sheet in your oven at 170 degrees F. It's okay if they overlap. Sprinkle tortillas with a little bit of water to avoid drying out. Heat four dinner plates in the oven as well.
Assembly:
Fill each taco with 1/12 of the fish, slaw and pico de gallo. Top each taco with toasted pumpkin seeds, cilantro, and avocado (if using).
Serve with lime.
