Place on a hot grill and cook, turning once or twice, until lightly browned on both sides (about 10 minutes). Let cool and finely dice (discarding hard core). Mix with remaining ingredients. Allow to marinate at least 2 hours at room temperature or cover and refrigerate up to 3 days. Serve at room temperature.
