Parboil red potatoes for 7-8 minutes, because they won’t cook enough on grill. Drain and cut in half. Slice red onion into ½” wheels. Preheat grill to 400 degrees. Put potatoes in bowl, add salt, pepper, oil. Put onions and potatoes on grill, cut side down.
Make your dressing: In a glass or mason jar, put in olive oil, apple cider vinegar, mustard, honey, salt, pepper. Shake up.
After 4-5 minutes (when they're nice and grilled) remove onions and potatoes from grill. Rough chop onions. Slice green onions. Mix in bowl. Add herbs, rough chopped. Pour half dressing on, mix. Let potatoes absorb. Add more if needed. Done.
