Yummy for the whole family.
1. Grill steak over medium-high heat for 8 minutes, turning once, or until
medium-rare. Transfer to plate, cover with foil, and set aside until potatoes
are cooked.
2. Ina non-stick frying pan sprayed with cooking spray, heat oil over
medium-high heat; cook onions and garlic for 5 minutes, or until browned.
Set aside.
3. Peel and quarter potatoes. Place in a saucepan and cover with cold
water. Bring to a boil. Reduce heat to medium-high; cook for 15 to 20
minutes, or until potatoes are tender when pierced with the tip of a knife.
Drain.
4. Mash potatoes with sour cream, stock, salt, and pepper. Stir in onion
mixture.
5. Thinly slice steak and pour barbecue sauce over top.
6. Place a tortilla flat on work surface. Place one-quarter of warm potato
mixture in center of tortilla; top with one-quarter of steak. Roll bottom of
tortilla up over filling tightly; fold in both sides and continue to roll. Repeat
with remaining tortillas, potatoes, and steak. Cut in half. Serve warm.
