Grilled Zucchini with Lemon Butter

Very easy and extremely tasty.

Ingredients

8 medium Zucchini
1/2 cup Butter
2 tablespoons Fresh Lemon Juice
1/4 teaspoon Pepper
1 teaspoon Garlic powder
1 teaspoon Oregano
1/4 teaspoon Curry powder
1/4 cup Parmesan cheese

Original recipe makes 8 Servings

Preparation

Preheat barbecue on medium.

Trim zucchini and halve lengthwise; score the cut side diagonally every 1" (about 1/4" deep). Melt butter in microwave and stir in remaining ingredients, except for cheese. Brush cut side of zucchini with basting liquid. Cook zucchini on grill (all sides) until somewhat charred and soft, 10 - 12 minutes.

Grate cheese on top just before serving.

It's winter and I didn't feel like messing with the grill so I cooked it on a ridged griddle. It was good but would have been better on the grill.

The flavor was pretty good with these, but I did find that the cook time was a little long. I like my zucchini to be grilled/charred, but not overcooked. Next time I'll cut the pieces a little larger to maintain some crispness.

Never had zucchini like this and it was sooo good! I too, made it without curry and loved it!

Very tasty...we cubed the squash and used a grilling basket, and subbed paprika for the curry. Rave reviews from guests who started out sceptical about having a veggie with our burgers!
