Very easy and extremely tasty.

Preheat barbecue on medium.
Trim zucchini and halve lengthwise; score the cut side diagonally every 1" (about 1/4" deep). Melt butter in microwave and stir in remaining ingredients, except for cheese. Brush cut side of zucchini with basting liquid. Cook zucchini on grill (all sides) until somewhat charred and soft, 10 - 12 minutes.
Grate cheese on top just before serving.
We tried this dish with BigOven recipe #101172, Italian Corn Crusted Baked Fish. It was an amazing combination and we've added this meal to our regular repertoire.
cameo530 1y agoIt's winter and I didn't feel like messing with the grill so I cooked it on a ridged griddle. It was good but would have been better on the grill.

Erincpeters 3y agoVery tasty...we cubed the squash and used a grilling basket, and subbed paprika for the curry. Rave reviews from guests who started out sceptical about having a veggie with our burgers!
