this recipe yields 12, 6 oz servings
1. Stir the grits into the water in a saucepan.
2. If you are using stone-ground grits, let them settle, then skim off any hulls that float to the surface.
3. Bring the mixture to a boil while stirring.
4. Simmer the grits, stirring every 5-10 minutes. If you are using quick-cooking grits, they will be done in 7-10 minutes but can be cooked longer if a thicker product is desired. If you are using regular grits, cooking time is about 45 minutes, and you may have to add water as they thicken. In any case, continue to cook unti l creamy, adding water as necessary.
5. Stir in salt to taste.
6. Add the cheese and stir until it is melted.
