Suggest a better descriptionHeat non stick skillet over medium high heat. Add 1 TBL olive oil. Add asparagus and garlic. Saute until crisp-tender.
Meanwhile, whisk eggs, salt and pepper in medium bowl.
Remove asparagus from pan and wipe out pan. Turn heat down to medium. Add remaining oil. Pour ¼ of egg mixture into pan swirling pan to make even coat.
When cooked through, slide omelet onto plate, put ¼ of the asparagus in the middle and roll it up. Serve over simple arugula salad or just eat as it is with toast. Enjoy!
