This went over very well with my Sunday school class!
Preheat oven to 350. Melt butter over medium heat in large skillet. Add onions. Cook onions until they are clear. Put seasoned salt in whisked eggs, and then add the eggs to cooking onions. Cook eggs "scrambled", but not too done. Add ham to egg mixture, and continue to stir until the ham is warm. Remove from heat. Now take a biscuit and mash it flat with palm of hand. Spoon about 1/2 tsp of egg/ham mix onto the biscuit, and top with a "medium" pinch of cheese. Pull edges of biscuit around the egg/ham/cheese mix, and pinch together like a purse. Place this seam-side down on an ungreased baking sheet. Repeat the pocket process, placing them about 2 inches from one another on the baking sheet. Cook 10-15 minutes, or until golden brown. Makes 40 pockets.
