This is a big hit with my 3 boys
1. Cook hamburger and drain the grease. Add the taco seasoning and rice. Simmer for 20 minutes.
2. Scoop 1/12 of the mixture into the tortilla and roll up. Pour enchilada sauce over the enchiladas and cover with 1 cup of cheese.
3. Cook at 350 for 25 minutes.
4. Garnish with sour cream and salsa.
